Tonight I recreated Skinny Taste’s Balsamic Chicken with Roasted Vegetables and man was it good. I even got lucky that 2 red peppers and some onions were ready for harvest out of the garden!
These are the first peppers I’ve grown and I was amazed how deep red they were – yum!
Here is what it looked like going into the oven and I was already excited…
And the beautiful healthy end result!
This is definitely going to be a new go to recipe, and it is so easy to swap out veggies based on what is fresh, in season, and on hand.
